Leather – Vinyl Combination on Furniture — Good or Bad Idea

When buying leather furniture, ask this question, “Is it all leather?”

Many consumers are surprised to find out that the “leather” furniture they purchased is in fact a leather and vinyl combination. They make this discovery when they notice splitting or cracking in the material. This most often occurs in the side panel of a seat cushion, or at a stress-bearing seam (outside arm, outside top of backrest, etc.).

The typical construction of a leather/vinyl combination is to use leather on those areas that come in contact with your body – the seat cushion top, the inside backrest and the tops of the armrests. All other panels are vinyl.

Here’s the problem. Vinyl is a synthetic material (and has nowhere near the tensile strength of leather). Leather is an organic material. The two materials are fundamentally incompatible when joined together along a seam. This is particularly apparent on a seat cushion where the vinyl side panel (boxing panel) is sewn to the leather top panel. Leather is porous and loses its moisture through evaporation (which is why leather should be conditioned regularly). To replace this lost moisture, the leather literally wicks (draws by absorption) oils from the vinyl where the two materials are in direct contact along a seam, reducing the vinyl’s oil content. As the vinyl loses its moisture, two things happen: 1. the vinyl loses its ability to flex. 2. it loses some of its mass (shrinks). The result is that the vinyl subsequently cracks. This is most commonly seen as fissures that start at stitch-holes and run perpendicular to the seam line. Over time, these cracks will only worsen. Once this starts, it is not repairable.

Canadian naturalist and painter Robert Bateman was born in Toronto, Canada, on May 24, 1930. Since childhood, he has been interested in wildlife and art. From the viewpoint of an artist, Bateman said that he found it extremely challenging to portray a “black animal on an almost black background.” Looking back, although Bateman became a high school art/geography teacher, he never stopped painting throughout his career. However, it was only in 1970s and 1980s that his paintings and talent began getting recognition. His work started gaining popularity with time. Bateman has around ten books, based solely on his paintings. He has been criticized over his decision to allow the reproductions of his work, by people who believe that this act devalues the genuine art market. Even today, Robert Bateman continues to paint beautiful scenes from the forests. Profit From Animals – Why Rare Breeds Are Worth Considering

Modern factory farm production requires assembly line breeds, animals that are almost “man-made.” Too many small farmers raise the same animals because they have become “normal.” White chickens and white turkeys, Yorkshire pigs and Holstein cows, only these breeds are so hybridized they probably share little in common with their ancestry.

The purpose of these “normal” breeds is to stack lots of cheap meat on supermarket shelves. But if you studied out what was in that cheap meat, you might not call it food, or at least, stuff you’d never threaten your body with. The interesting thing is this whole factory farm system is supposedly set up to increase “profit.”

I thought I might involve my children with raising animals for showing in the local fair. Here in Texas, some children graduate from school with a very large sum of money in their bank accounts obtained by showing animals at the county fair.

Then I saw some chickens raised by friends who did have those large bank accounts. The judge handled the chickens carefully and talked about what qualities of body shape and size he was looking for. When he set the birds down, they fell over. They could not walk! If you set them on their backs, they would probably just stay there. They were pathetic. When we heard how continual force-feeding had made them winners, I did not want my children to think this was a way to “profit” from animals.

Many rare and unusual breeds of farm animals possess qualities of great value other than shoveling the fattest, cheapest chunk of meat onto someone’s plate. The American Livestock Breeds Conservancy is a great place to learn more. For instance, check out the Buckeye chickens. These are large, meaty birds that are “very cold-weather hardy.” I know from personal experience that white chickens die like flies in the cold. Buckeyes could be well worth trying if you live in colder climates and love to watch your chickens roam as much as possible.

There are many valuable qualities heritage breeds have retained that the modern factory breeds have lost. Ease of reproduction, healthier meat, better flavor, all these are “profitable” elements. Not needing a vet, or even yourself, every time your cows give birth is a valuable characteristic, for instance.

There are a number of farmers who do keep these rare breeds from an altruistic view, some work as non-profits. I applaud their efforts. But I am convinced that a simple and good life is a life of profit and increase. The more that a farmer profits from the valuable characteristics of rare and unusual breeds – on a small, simple-life scale, the greater the chance that many of these wonderful breeds of farm animals can be preserved.

Keystone Resort Vacation Rentals: Mountain House Vs River Run Base Areas

Keystone Resort, Colorado is home to world class skiing terrain, incredible dining, affordable cat skiing, three mountain peaks and it is one of the few resorts in Colorado to offer night skiing, making for one of the longest ski days around, offering visitors a huge bang for their buck. Not to mention the countless other winter activities to enjoy such as snow tubing, ice skating, fine dining, sleigh rides, live music, festivals, and more!

So you’ve made the decision to visit Keystone this winter, now comes the hard part, where to stay? Keystone is a small town, about 3 miles in length sitting in a valley at the bottom of the mountain. The mountain itself is made up of three separate peaks that line up from North to South; Dercum, North Peak, and the Outback, each offering it’s own unique terrain and features. Dercum Mountain is the furthest peak North and it’s front side offers the only two access points to the entire mountain, River Run and Mountain House.

Of the two base areas, River Run is the newer of the two and is known as the main Village, where both the gondola and the Summit Express chair lift pickup and take you to the top of Dercum Mountain. This village features a pedestrian-only walking area, with plenty of cute boutiques, ski rental shops, coffee shops and restaurants. There is an outside overnight ski check near the gondola and bathrooms and lockers inside the season pass and ticketing office. The only thing this base area is really missing is a central ‘ski lodge’, but making up for it are plenty of restaurants within walking distance of the slopes. The Kickapoo Tavern is a fun place to have lunch or an apres ski beer, with a big outdoor patio that overlooks the slopes. Some fun features of River Run Village are the Dercum Square Outdoor Ice Rink, the various statues throughout the village, the many unique shops and an outdoor gas fire pit, which is perfect for warming up at on a cold day. There are a cluster of River Run accommodation options that are all within yards of the gondola, including the Springs, Jackpine, Arapahoe, Black Bear, Silver Mill, Dakota, Buffalo, Expedition Station and Red Hawk Lodge. The two true ski-in, ski-out properties at Keystone are Lone Eagle and the Timbers, which are actually across the Snake River Bridge just past the gondola and then up the slopes a few yards from the Village.

Both bases are home to ski schools, skier services and rental shops. Mountain House has a great beginner’s area with a magic carpet and easy chair lift. You can find similar beginner terrain at the mid-mountain gondola stop and at the top near Schoolmarm. Although you won’t find the pedestrian ‘mall’ area here with the same extensive shopping and dining options as River Run, you will find that Mountain House is a true ski resort base area complete with a lodge with indoor lockers, a cafeteria, a bar, ski supply shop and bathrooms; suiting any skier’s needs. You will also find a lift ticket office here at the base near the two chair lifts, the Peru and Argentine. The Peru Lift takes you to the top of Area-51, along with some green and blue runs and you can be back to the River Run Base area in just one run or hop on the quick mid-mountain Montezuma lift to head up to the top.

Lodging prices at Mountain House tend to be a little lower than River Run, while offering most of the same conveniences. Chateaux DuMont Properties are very popular and unique, most feature a private hot tub with a slopeside view! Slopeside Condos are another great option at Mountain House, and are just steps from the lifts. There are quite a few properties here that are within walking distance to the mountain at a fraction of the cost. If you feel the need to stop by the main village, just ski down or take a shuttle!

There are also plenty of lodging options outside of the two main villages. Settler’s Creek in East Keystone is one of the newest and most popular housing developments to the resort and feature beautiful multi-story town homes with garages and gorgeous views of the surrounding mountains. In the center of the neighborhood is ‘Minnie’s Cabin’, a central recreational gathering spot, complete with a heated outdoor pool, hot tub, pool table, grill, and hangout area to host gatherings and barbeques.

Keystone Resort hosts a free resort shuttle that will take you just about anywhere you need to go within Keystone and most lodging complexes are serviced by the shuttle. Most rides to the slopes from anywhere in Keystone are 10 minutes or less! There is also a free county-wide transit system known as the Summit Stage which makes it very easy to get around in the high country without a car. The Denver International Airport is just a mere 90 minutes away and there are numerous shuttle companies that will take you to and from the airport.

If you are willing to stay outside of the main villages at Keystone, you will often be able to find better deals and prices on your accommodations. Be sure you choose a property management company that lets you pick the exact property you are staying at so you will know what to expect and can plan your trip ahead of time. If you have a large group, ask your property manager about renting a private home! Wherever you stay in Keystone, you will find it is very easy to find everything you are looking for and more!

Mobsters – Frank Costello – The Prime Minister of the Underworld

In 1891, Frank Costello was born Francesco Castiglia in Lauropoli, a mountain village in Calabria, Italy. In 1893, Costello’s father moved alone to New York City, where he opened a small grocery in East Harlem. In 1900, the elder Castiglia had saved up enough money to send for his wife, Frank, and Frank’s older brother Edward. It was his older brother Edward, 10 years Frank’s senior, who got Frank first involved in petty crimes.

At the age of 14, Costello, wearing a black handkerchief over his face, robbed the landlady of the tenement house in which he and his parents lived. The landlady recognized Costello, but Costello concocted an alibi, which satisfied the police, and he was never arrested. In 1908, and again in 1912, Costello was arrested for assault and robbery, and again he somehow beat both raps.

In 1915, Costello then 24 years old, was sentenced to a year in prison for carrying an illegal firearm. Despite the fact that in the decades to come he was actively involved in scores of criminal activities, Costello would not see the inside of a jail cell again for 37 years. Costello swore at that time, that when he got out of jail, he would never carry a gun again. And he ever did.

Upon his release from jail, Costello met and married a Jewish woman named Loretta Geigerman. It was unusual at the time for an Italian to marry outside their Catholic faith. However, Costello saw things differently, and he eventually forged relationships with many Jewish gangsters, including Meyer Lansky, Louie “Lepke” Buchalter, and Bugsy Siegel.

Soon after he was married, Costello began working for the murderous Joe “The Clutch Hand” Morello, who along with his sidekick, Ignazio “Lupo the Wolf” Saietta, were responsible for the treacherous Black Hand extortion racket.

While he was working for Morello, Costello met Charles “Lucky” Luciano, a Sicilian who ran the rackets in Little Italy, on the Lower East side of Manhattan. Through Luciano, Costello became tight which such mobsters as Vito Genovese, Tommy “Three-Finger Brown” Lucchese, as well as with Lansky and Siegel. Together, these men became heavily involved in armed robbery, burglaries, extortion, gambling, and dealing drugs. When The Volstead Act became law in 1920, starting the era of prohibition, Costello and his pals cashed in big, bringing in illegal alcohol from Canada, and as far away as England. Their partner was Arnold “The Brain” Rothstein, who initially financed the entire operation.

Costello, Luciano, Lansky, and Siegel were raking in so much dough, they were able to pay off crooked politicians and police officials an estimated $100,000 a week for protection. These payments went all the way up to the office of the New York City Police Commissioner – Grover Whalen. In 1929, right after the stock market crashed, Costello told Luciano that he had to advance Whalen $30,000 so that Whalen could cover the margin calls from his stockbroker.

“What could I do?” Costello told Luciano. “I had to give it to him. We own him.”

Even after all the hefty graft payments they had to dole out, there was still about $4 million in yearly profits from all their rackets, to be split equally amongst Costello, Luciano, Lansky, and Siegel.

It was during this period that Luciano convinced Costello (a name of Irish decent) that he should change his name from Castiglia. Luciano later said, “When we got up into our ears in New York politics, it didn’t hurt us at all that we had an Italian guy with a name like Costello.”

In the late 1920’s, both Luciano and Costello joined the Mafia gang headed by Joe “The Boss” Masseria. At the same time, Costello saw that it was advantageous to form alliances with other ethnic groups. Besides the Jews – Lansky, Siegel, and Rothstein, Costello became tight with Irish gangsters on the West Side of Manhattan, specifically Owney “The Killer” Madden and William “Big Bill” Dwyer. With the Irish, Costello became a big part of a rum-running operation called “The Combine. Of course, Costello shared all his profits with Luciano, Lansky, and Siegel.

However, Masseria frowned on members of his gang dealing with anyone other than Sicilians. The fact that Costello was Calabrese didn’t please Masseria too much either.

Seeing the handwriting on the wall, Luciano and Costello, along with Tommy Lucchese, and Vito Genovese, switched sides in the “Castellamarese War,” in which Masseria was actively engaged in, with bitter rival Salvatore Maranzano.

On Sunday, April 15, 1931, Luciano took Masseria out to lunch to the Nuova Villa Tammaro in Coney Island. After Massaria finished a sumptuous lunch, the two men engaged in a game of cards. During the card game, Luciano excused himself and went to the men’s room. While Luciano was in the men’s room, four gunmen, led by Bugsy Siegel, burst through the front door and filled Masseria with enough lead to render him quite dead. When the police arrived minutes later, Luciano claimed no knowledge of what had transpired, because he had been indisposed at the time of the shooting. The police scoffed at Luciano’s story, but they had no proof of Luciano’s involvement (or maybe they were bribed), so they let him go.

In just a few months, Costello and Luciano became disenchanted with Maranzano’s old world ways. Considering himself an aristocrat, and of a higher calling then his men, Maranzano appointed himself “Capo de Tuti Capo (Boss of All Bosses).” To make matters worse, Maranzano extracted a bigger share of his underling’s profits than even the greedy Masseria had demanded.

The final straw, was when, through moles planted close to Maranzano, Costello and Luciano discovered that Maranzano was plotting to kill Luciano, because he feared Luciano’s ambitions. Not liking the idea of soon being a dead man, Luciano quickly sent four Jewish killers, led by the very capable Red Levine, to Maranzano’s midtown office. Disguised as police detectives, the four men quickly disarmed Maranzano’s bodyguards, then shot and stabbed Maranzano to death.

With their two former bosses now six feet under, Costello along with Luciano, Siegel, and Lansky formed a National Crime Commission. Whereas Luciano’s job, as boss of the family, was running the day-to-day operations of whatever swindles they were involved in, Costello, his consiglieri, was the man behind the scenes, greasing the wheels for their protection, by getting chummy with the top politicians and police officials in New York City. Of course, this meant Costello had to pay and pay plenty, but he knew when he needed a political favor, that favor would always be performed. Costello bragged he owned all of the top Tammany Hall politicians, including Mike Kennedy, Christie Sullivan, Frank Rossetti, Carmine DeSapio, and Hugo Rogers.

Costello used his “in” with Tammany Hall to basically make any political appointment he wanted. Rogers even admitted, “If Costello wants me, he sends for me.”

In the mid 1930’s, Costello, now one of the Luciano families biggest earners, went into the slot machine business with Phil “Dandy Phil” Kastel. Costello placed over 25,000 slot machines in New York City restaurants, bars, drugstores, bus stops, and gas stations. This went well for a while until reformist New York Mayor Fiorello La Guardia went on a rampage against the illegal slot machine business. La Guardia made a big show of confiscating thousands of Costello’s slot machines. Laguardia, aided by local law enforcement, loaded the slot machines on barges, and then La Guardia personally pushed the slot machines into the water. Photos of La Guardia’s antics appeared in all the local newspapers, as well as in the movie house news reels.

His New York City slot machine business in ruins, Costello, along with Kastel, moved their operations to New Orleans, Louisiana. There, with the aid of New Orleans mob boss Carlos Marcello, they were able to place their machines were ever they deemed necessary. Their whole operation was under the protection of Senator Hughie Long, himself a bastion of corruption.

In 1936, Luciano began being hounded by Special Prosecutor Thomas E. Dewey. Despite flimsy evidence, and the perjured testimony of prostitutes and pimps, Dewey prosecuted and convicted Luciano on a trumped-up prostitution charge. Luciano later claimed that it was Dewey himself who had framed Luciano.

With Luciano locked away in prison, Luciano appointed his underboss Vito Genovese as head of the Luciano Crime Family. However in 1937, Genovese was indicted for murder, and to avoid prosecution, he fled to Italy. At this point, Luciano appointed Costello as the head of the Luciano Crime Family.

Costello did very well as the new boss. Working with men of various nationalities, Costello increase the family’s profitability across the board. Costello controlled the gambling, horse race fixing, policy rackets, and the illegal race wires throughout the country. Of course, to keep his illegal enterprises running smoothly, Costello contributed millions of dollars to the retirement funds of hundreds of crooked politicians and law enforcement officials. By doing this, Costello assured that when he needed a favor, he indeed got that favor.

In 1943, Costello called in one of his political chits, when he demanded that Thomas Aurelio be appointed a judge. The only problem was, Manhattan Dist. Atty. Frank Hogan, one of the few politicians not on Costello’s payroll, obtained a wiretap on Aurelio’s phone. The date was August 23, 1943, and the man Aurelio was speaking to was none other than Frank Costello, confirming that Aurelio would soon be a judge.

The conversation went like this: “How are you, and thanks for everything,” Aurelio said.

“Congratulations,” Costello said. “It went all the perfect. When I tell you something is in the bag, you can rest assured.”

“It was perfect,”Aurelio said. “It was fine.”

“Well, we will all have to get together and have dinner some night real soon,” Costello said.

“That would be fine,” Aurelio said. “But right now I want to assure you of my loyalty for all you have done. It is unwavering.”

Amazingly, Costello had his clutches so deep into New York City politicians and law enforcement officials, despite the conversation between him and Aurelio being made public, Aurelio still got the judgeship, right after he beat a disbarment proceeding. That shows how crooked New York City politics was in those days.

However, the most important person Costello was able to get close to was the FBI director J. Edgar Hoover. Hoover was a degenerate gambler, who frequented the racetracks often. While Hoover was ostensibly placing two-dollar bets at the two-dollar window, his underlings would be at the hundred dollar window placing bets for Hoover.

Hoover’s addiction to the horses fell right in with Costello’s plans. Costello, through his intermediary – bookmaker Frank Erickson -would find out when certain horse races were being fixed. Costello then would pass this information to nationally syndicated columnist Walter Winchell, who was a mutual friend of both Costello and Hoover. Winchell told Hoover which horse to bet, which made Hoover very happy and very rich to boot.

The Costello – Hoover relationship was hidden for many years. However, it was later discovered that whatever Hoover was in New York City he would meet secretly with Costello for breakfast, and sometimes even on a park bench.

The question that should be asked, is if Costello was providing Hoover with information on fixed horse races, what did Hoover do for Costello?

The answer is simple. During this period of time, although Hoover went rabidly after such Number One Public Enemies like John Dillinger and Baby Face Nelson, Hoover absolutely refused to recognize that the Mafia, or the “Cosa Nostra” even existed.

However, not even Hoover’s influence and protection could keep Costello out of the limelight forever. In 1951, Senator Estes Kefauver from Tennessee, and his five-man special committee to investigate organized crime, took dead aim at Costello. On March 13, 1951, Costello was summoned to testify before the Kefauver Committee. However, Costello did not want his face seen on national television, so through his lawyer, George Wolf, it was agreed upon that only Costello’s hands would be shown on television.

With a nationally televised audience anxiously watching, Costello, in his gravely voice, reluctantly answered the committee’s questions. He tried sparring verbally with Kefauver and his men, but it was obvious to all that Kefauver had exposed Costello for exactly what he was – a big-time Mob boss.

Unfortunately for Costello, who was now called by the press the “Prime Minister of the Underworld,” the hearings did not do well for his image with his cohorts. By the time Costello got off the witness stand, Costello’s standing in the Cosa Nostra had taken a big hit. And Costello was now ripe for an even bigger hit. A hit on himself.

With Luciano in exile in Italy, Vito Genovese had returned to the United States, with the ambition of taking over Luciano’s crime family. To parry this, Costello became very close with Mafia killer Albert Anastasia. Anastasia’s hatred for Genovese went back a long time, and thus stared an internal fight for control of the mob rackets in New York City.

On May 2nd, 1957, Frank Costello entered the lobby of his apartment building near Central Park. Waiting for him in the shadows by the elevator was a hulking, ex-professional prizefighter named Vincent “The Chin” Gigante, a close associate of Genovese. Gigante was sent there by Genovese to eliminate Frank Costello from the local crime scene, thus giving Genovese a clear path to the throne.

Suddenly, Gigante stepped out into the light and yelled at Costello, “Hey Frank, this is for you!”

Gigante fired one shot, which creased the side of Costello’s head. However, because Gigante wasn’t the best shot in the world, and also because Gigante broke the first rule of Mafia rubbouts: “Don’t tell your victim you’re about to shoot him. Keep your mouth shut and just shoot him,” the wound was little more then a flesh wound. Costello was rushed to the hospital, where his wound cleaned and bandaged. Costello was safely back home later that night.

When Gigante fled the scene of the shooting, he thought he had killed Costello. Finding out his mission had been a failure, the 6’2″, 300 pound Gigante went into hiding. Eventually, Gigante was caught and brought to trial. However, since Costello, true to the mafia code of “omerta,” refused to testify against him (Costello said he didn’t even recognize Gigante), Gigante walked out of court a free man.

(Editor’s note: Usually when a Mafia killer botches a hit, he is then usually killed himself. For some reason, Gigante was never harmed, and he became the boss of the Genovese Crime Family in the mid-1980s. Go figure.)

For all practical purposes, this ended Costello’s influence in the Cosa Nostra. However, Costello was still able to pull off a huge Machiavellian move in order to get even with Genovese. In concert with Luciano, who was still in exile in Italy, and Carlo Gambino, who was looking to ascend the ladder to mob boss himself, they were able to entice Genovese into a big drug deal. With Genovese knee deep in dope, they tipped off the police, and Genovese was arrested on a narcotics charge. A very bad rap.

Genovese was tried and convicted, and sentenced to 15 years in prison. With Genovese safely behind bars, Carlo Gambino was made the boss of his own family: The Gambino Crime Family.

After serving 10 years of his 15-year sentence, Genovese died in prison, thus making Costello and Gambino quite happy indeed.

His revenge-mission accomplish, and tired of the day to day operations of mob business, Costello greatly toned down his involvement in the organized crime scene. Costello moved to Long Island and only rarely came into New York City for sit downs with his former cronies, who sometimes came to him for advice, at an apartment he still kept in the Waldorf-Astoria. These pals included Carlo Gambino, Tommy Lucchese, and Meyer Lansky.

In 1973, Frank Costello died of a heart attack in a Manhattan hospital. He was buried in St. Michael’s Cemetery in Queens. His wife Bobbi insisted that none of Costello’s Mafia friends attend his funeral, or sent flower displays to the funeral parlor.

In a display of utter disrespect, mobster Carmine Galante, after he was released from prison in 1974, ordered the bombing of Costello’s burial site. When the dust cleared, both doors of Costello’s cemetery mausoleum were blown completely off their hinges.

This was Galante’s way of saying he was coming back and taking control of the Cosa Nostra in New York City. Which he certainly attempted to do, with much cunning and killing of his own.

Traditional Kobe Beef Recipes – Japanese Style

Everyone loves the Kobe beef. Not only because of its tenderness, it’s marbled richness, or it’s strong tangy flavour but also because of its versatility when it comes to cooking. Whether raw, sautéed, grilled, fried or what have you, the Kobe beef brings about some of the most delectable meals anyone could ever have. Even though food enthusiasts love the Kobe beef steak, popular traditional Japanese way of cooking still dominate because the special beef after all hailed from Kobe in Hyogo Prefecture Japan. The beef comes from what is called Wagyu or Japanese cattle hence it is also referred to as the Wagyu beef. The most popular Wagyu beef recipes from Japan include teppanyaki, sukiyaki, and shabu-shabu. Here’s how to prepare the softest and most succulent beef in such manner:

When making Wagyu shabu-shabu you must first slice 1 pound of Wagyu beef tenderloin or sirloin into paper thin slices. Cut one pound of Chinese cabbage, half a pound of watercress, half a pound of shirataki noodles, half a pound of enokitake mushrooms, half a pound of mushrooms, 6-8 shitake mushrooms, 1 pound of tofu, and 3 slices of kombu or seaweed into bite-sized pieces. Then you create a dip by combining 2 parts of soy sauce and only a part of lemon juice. The next step is to place all ingredients on a large platter. The Kombu slices should then be submerged in cold water then place over a stove. It should be removed right before the water boils. Once the slices are removed, keep the water boiling very gently. Now each person can cook their own meal by submerging one item into the pot at a time. The vegetables should be cooked first as the Kobe beef strips are so thin that they cook really fast.

For the Kobe teppanyaki recipe you’ll need a pound of cubed Kobe beef steak (sirloin of tenderloin), 12-18 pieces of shrimp, 2 large carrots, 2 large green peppers, 1 onion, 1 Chinese cabbage, 12 Shitake mushrooms, and Yakiniku sauce. First you must cut all ingredients into bite-sized pieces, then oil an electric pan and place the items in different sections of the pan. After cooking get a food item and dip it in the yakiniku sauce.

When making the Kobe beef sukiyaki recipe you’ll need the same amount and type of beef as the recipes above, half a pound of thinly sliced Shitake mushrooms, 2 large onions sliced thinly, 3 diagonally sliced celery stalks, cut bushel green onions, 3 cups of fresh spinach, 2 tablespoons of salad oil, and a 5-ounce can of bamboo shoots drained. For the sauce you’ll need half a cup of beef broth, 2 tablespoons of sugar, 2 tablespoons of sake, and 1/3 cup of soy sauce. Now the Wagyu beef must be cut into thin strips, about ¼ inch thick. Then heat oil in a skillet, and move meat to one side of the skillet mixing it with beef broth, soy sauce and sake sugar. Place onions, mushrooms, celery and the bamboo in separate areas or sections of the skillet then cover. Let the mixture simmer for ten minutes then add spinach and let it simmer for another 5 minutes. You may serve it over rice if desired.

Manhattan Clam Chowder – Give it the Praise it Deserves!

I went to college in Boston, Massachusetts so I am familiar with New England clam chowder. When I went out for dinner, which wasn’t often, I always ordered it. In fact, I looked forward to clam chowder. No doubt about it, this buttery, creamy, stick-to-your ribs soup is delicious, especially on a winter night.

My love of New England chowder did not change my love of Manhattan chowder. I am originally from Long Island, New York, and our family used to go to Jones Beach, on the South shore of the island, to swim. We stayed for the evening water show and clam chowder. An elementary school student at the time, I loved the chowder and the little packets of round crackers that came with it.

Sometimes my mother made Manhattan clam chowder from scratch and it was delicious. Dad opened the clam shells and removed the meat with a small, stubby knife. I remember being a bit scared as I watched him. But chef and writer James Beard hated Manhattan chowder, according to http://www.whatscookingamerica.net. He described it as vegetable soup with clams dumped in it. With all due respect to James Beard, I love Manhattan chowder because of the vegetables and clams.

The http://www.whatscookingamerica.net Wet site says some food historians think Manhattan chowder was also known as Coney Island chowder and Fulton Market chowder, after the famous Fulton Fish market in New York City. Manhattan clam chowder was also called Connecticut chowder. I found many recipes for the tomato-based chowder in my cook books.

A recipe in “The Healthy Cook,” published by “Prevention Magazine,” contains clam juice, reduced sodium canned tomatoes, garlic, and hot pepper sauce. The original “Joy of Cooking” book recipe contains bacon, canned tomatoes, ketchup, and butter. Other Manhattan chowder recipes have green pepper in them. I didn’t want green pepper, ketchup, hot sauce, or garlic in my chowder.

What did I want? I wanted lots of clam flavor and lots of vegetables. Read my recipe and you will see it has more vegetables than clams. There is hardly any fat because the bacon fat has been cooked off. Canned clams and juice contain salt so I have omitted it from the recipe. Stir up a batch of Manhattan clam chowder today and give it the praise it deserves!

INGREDIENTS

2 14.5-ounce cans of whole, no salt tomatoes and juice

4 6.5-ounce cans chopped clams and juice

1 8-ounce bottle clam juice

2 1/2 cups water

1 cup chopped celery

1 cup chopped yellow onions

1 cup sweet baby carrots (from a package)

1 medium potato, peeled and cut into small pieces

1/2 cup chopped Italian parsley

3 tablespoons pre-cooked real bacon pieces

1 teaspoon thyme leaves

1/4 teaspoon seasoned pepper

METHOD

Pour canned tomatoes into soup kettle. Cut tomatoes into bite-size pieces with kitchen shears. Chop the celery and onions and add to soup kettle. Add remaining ingredients, cover and simmer for one hour. Or simmer in a slow cooker, on low, for four hours. This Manhattan clam chowder tastes even better the next day. Makes 12 one-cup servings.

Cleaning the Walls – How to Clean Retaining Wall Blocks

Retaining walls are often meant to be decorative as well as practical, and when they look good, they can add a lot of appeal to your garden or yard. The only problem is that any retaining wall will eventually accumulate dirt, mildew, plant material, and various kinds of gunk that can leave the blocks looking stained and ugly. Luckily, getting the blocks clean again is relatively simple, and with the right tools and some attention to detail, any stained or dirty retaining wall can be returned to its former glory.

Part of what you need to consider, before you try to clean a wall or a few blocks, is that the method that you should use depends on what the wall is made of. If it’s an old stone wall that has stood for decades or longer, or if it is made of prized antique bricks, it’s a very bad idea to go in guns blazing, and ruin the wall by using harsh chemicals or the wrong cleaner. Also, if you go about things in the wrong way, you can drive dirt deeper into the blocks and make the entire job harder. Think carefully before you pull out the pressure washer!

The best place to start, no matter what your retaining wall blocks are made of, is with an ordinary garden hose with a sprayer attachment. (You’ll need the kind that has a reservoir that allows you to add a cleaner to the spray.) Start off by gently spraying down the whole wall, or the blocks that you need to clean. The entire area needs to be soaked, so that when you go to clean out the dirt, there is no wicking action drawing moisture (and dirt) into the blocks or into the wall.

Consider whether or not the wall is in an area where you need to protect the greenery. If you are concerned about runoff from the cleaning process, especially if you are going to use some kind of harsh product to remove stains, then you should consider putting down tarps or plastic drop cloths in order to shield the plants from the worst of the runoff.

Then, these are the basic cleaning options:

* If you are cleaning a stone retaining wall, invest in some professional-grade degreaser, and put it directly into the reservoir in your garden hose sprayer. Soak the entire area to be cleaned, and wait ten to fifteen minutes for the degreaser to work. (The wall will very likely look dirtier than before, as a result.) After waiting, take a power sprayer, and spray down the wall, working from top to bottom and from one side to the other. Keep it up until the wall stops foaming. Then, let it dry.

* If you are cleaning a retaining wall made of bricks or concrete blocks, start off by using some ordinary dish soap in your garden sprayer. Using a dish soap solution and a toothbrush, carefully scrub at stained areas. Spray off the soap with a power sprayer, and let the wall dry.

* If you are cleaning concrete blocks and soap does not remove the stains or dirt, fill your garden sprayer attachment with bleach. (Remember to take appropriate safety precautions, by wearing goggles or safety glasses, and appropriate clothing.) Spray down the wall with bleach, as above; then allow to dry.

* If none of these options work, there is hydrochloric acid. It can be effective in removing stains on some kinds of blocks, but it is too harsh for use on all materials. If you must resort to using hydrochloric acid, make sure that you follow the manufacturer’s directions exactly — or, consider bringing in a professional who can safely work with this kind of hazardous substance.

Ultimately, most dirt and stains on retaining wall blocks are not that difficult to remove, and the average homeowner should be able to do the job. Just remember that you should never start by using a power washer, and that powerful chemicals and cleaners need to be used with an appropriate level of caution.
