As a child, I remember learning that there was value in having everything in moderation. Most people who I know who are truly happy have come to a place where they feel they have "enough."

"Enoughness" is a very elusive concept in an age where we are taught to want more, more, more, and also work in environments that ask us to have less, less, less.

While some believe "you can not be too rich or too thin," we have seen first hand that, in the case of Bernie Madoff, and the epidemic of anorexic models in the fashion industry, one who lives by this philosophy does so at great risk.

We also receive contradictory messages, as we are inundated with options for a simple handle for a kitchen cabinet, at Home Depot, then go to work in paperless offices, where the "clean desk police" forbid any pens, photos of loved ones or even plants in ones workspace. Decision making can be a hard process to start with, but how much harder is it to decide "what is right" or "what is right for YOU," when presented with overwhelming choices and things or being mandated to have nothing at all? Too many choices or no choice does not lead to finding a happy middle ground.

These contemporary examples teach us, you CAN get too much of a good thing. Or perhaps, even more accurately, taken to an extreme, a good thing can even turn bad.

"Hoarding" has become a very newsworthy topic, as a growing number of people "hold on" to what an insider might judge as "anything and everything," from used paper cups, to old pillows, to newspapers and even trash. One can rationally argue that holding on to things, especially "useless" things, and too many things, does not really provide safety, and can even lead to illness or death, as in the case of Homer and Langley Collyer, "two pack- rat brothers who for four decades crammed their Harlem mansion with heaps of debris, "until Homer died of starvation and Langley was smothered by a heap of debris.1

Yet, as I remember learning in college Psychology class with the cloth and wire monkey experiments2, when you are deprived of real love, touch, care and human contact in a consistent way, unimagineable sources of pseudocomfort become not only acceptable, but even essential.

On the other end of the continuum, when we hold on to nothing, as is mandated in the sterility of the paperless office, we are emotionally and spiritually anorexic, even dead and certainly numb. We become so detached, nothing matters. Our emotional bonds are fleeting. Everything is short-term or just for now. Our virtual world, where little is physical and tangible, and so much is transient, does not support our investment of emotional or historical energy into creating treasures and keepsakes to pass on to future generations.

If a volcano were to bury a major city like Chicago, New York or Boston, and archeologists were to dig up the ruins many years into the future, what they would discover first is our technological infrastructure – plastic and metal from computers and wires, and not the more personal communications, and treasures closer to the heart of human beings.

Even in the here and now, people do not do the "work" required to build and sustain healthy relationships, because what is not easy or convenient is too easy to dispose of and replace. So, we attach to things and detach from our hearts and human beings who could be loved ones. I guess, some of us are cloth monkeys and others of us are wire monkeys, and the legacy we pass on to our children will include attachment disorders, without models or experiences of what we really need emotionally, spiritually, physically and practically to feel we have "something to hold on to" that will sustain us in a healthy way.

If we do not find ways of getting regrounded in the basics of being a human being – where the emotional and spiritual intangibles count for as much as power, status, money, and things, we really do not have anything to hold on to . And we will continue to come up with addictions of unhealthy, compensating attachment or stark, depriving unhealthy detachment.

Human beings seem to be the only animals that take hoarding to a pathological extreme. And I suspect humans are also the only animals to take starkness and detachment to pathological extremes as well. Perhaps that is why so many of us are realizing the importance of our four-legged friends. They are angels in our midst, trying to help us come back to a place of balance and peace.

  • 3 pounds red snapper, orange roughy, or grouper fillets

In a lightly greased 13 x 9-inch baking dish, place fillets on bottom and sprinkle with salt and pepper. Pour lime juice over fish. Cover and chill in refrigerator for 1 hour. Drain fillets, and top with Jalapeno sauce.

Bake at 350 degrees for 35 minutes or until fish flakes easily with a fork.

Jalapeno Sauce

This recipe yields 4 cups of sauce. It can be used in recipes, other than Veracruz-Style Red Snapper, that call for a type of red sauce. If you love the heat of jalapenos, try using this tasty yet spicy sauce over enchiladas or in place of salsa.

What You Need:

  • 3 cups peeled, diced tomato
  • 1 medium onion, chopped
  • 2 garlic cloves, pressed
  • 2 tablespoons vegetable oil
  • 3 medium-size pickled jalapeno peppers, seeded, rinsed and chopped
  • ¼ cup pimiento-stuffed olives, sliced
  • 1 teaspoon salt
  • pinch of ground cinnamon
  • pinch of ground cloves

How To Make It:

In a blender, process diced tomato until smooth.

In a skillet over medium heat, sauté onion and garlic in hot oil until tender. Add tomato, jalapeno pepper, pimiento-stuffed olives, salt, cinnamon, and cloves. Simmer 5 minutes.

Shrimp Fajitas

This recipe makes 4 servings. Serve with sour cream and your favorite salsa. Papaya, mango, and other fruit-based salsas go great with these. Other great toppings are shredded lettuce, shredded cheese, diced tomatoes, diced jalapenos, and Pico de Gallo. Guacamole can also be served on the side.

What You Need:

  • 1 ½ pounds unpeeled, jumbo shrimp
  • 1 to 2 tablespoons Mexican spice mix or fajita seasoning
  • 8 6 to 8-inch flour tortillas
  • 1 small purple onion, thinly sliced and separated into rings
  • 1 small red bell pepper, cut into strips
  • 1 lime, cut in half

How To Make It:

Peel shrimp and devein, if desired. Rinse and drain on paper towels.

Place shrimp in a heavy-duty plastic bag. Add spices or seasoning. Seal and shake to coat. Chill in refrigerator for 15 minutes.

Heat tortillas and keep warm.

Sauté onion and bell pepper in a skillet coated with non-stick vegetable cooking spray over high heat for 3 minutes or until tender. Add shrimp. Sauté 6 minutes or until shrimp turns pink. Squeeze lime over mixture. Place evenly down centers of tortillas.

Serve immediately as desired.

Learn How to Build Kitchen Cabinets

The base for the cabinets should be 3¼ inches high and the size should be the same as the floor of the cabinets minus the sides, front and back of the cabinets. Use the table saw or a circular saw to cut the plywood to the desired length and nail it all together.

Use the cabinet grade plywood to create the floor of the cabinet and use a little glue and some finishing nails to hold it to the base. Next glue and nail the sides of the cabinet to the base, using the clamps to secure them in place while you drive the nails. Ensure that the carcass is correctly squared. You can now put in whatever shelving you plan to include.

When the carcass is finished move on to the face frame; cut the oak wood to the required length and then decide where the dowel holes will go and set out the face frame and the stiles (vertical pieces) to make sure that everything fits correctly. Use the doweling jig or horizontal boring tool to drill the required holes for the dowels you are using. Put wood glue on the stiles, dowels and in the dowel holes and then place the dowels into their chosen holes using the mallet to set them properly. Use the clamps to hold the assembly together until the glue dries and everything is dried in position.

Drill holes along the top, middle, bottom and sides of the face frame to keep it to the carcass. Apply glue to the edges of the plywood (the carcass) and the face frame and use clamps to keep the face frame in position. Ensure that the face frame is properly lined up before tightening the clamps. Next nail 6d finishing nails into the pre-drilled holes to secure the face frame in place.

You can choose to order ready-made doors or you can make them too. As with the face frame use dowels, clamps and glue to put the doors together, however, for the doors you need to use the router to create a slot for the door insert. Glue, clamp and nail the drawers together too and install the slides for the drawers and doors.

Install the door inserts and sand down all the segments of the cabinet and then put in the doors and drawers. Fill in all nail holes with wood putty and put on whatever finishing touch you desire like stain, varnish and polyurethane.

Put in the drawers, doors, knobs, handles, hinges and set the cabinet in place. Use a drill and the self drilling screws to secure the cabinets to the wall and lastly, put in the top of the cabinet and you are finished.

Tips and Warnings

Use a clamp to hold a ruler or other straight item onto the plywood when cutting to function as a guide.

Any height or width the counters are to be, build the frame about ¾ of an inch lower and narrower so that the cabinets are the designated size when the doors and counter tops are attached.

Laundry Rooms – To Stack or Not To Stack?

Laundry rooms are without a doubt a service area, but they can be attractive, colorful and functional spaces. In two recent cases, I faced with the question of whether or not to stack the washer and dryer. In the first case, stacking was the most practical application given the available space, a very awkward room inside the garage.

Removing a deep and poorly spaced shelf was the first practical thing to do. The client was using it for storage with predictable results: things were out of sight and got lost. The shelf was too high and too deep. What seemed like a good idea in theory was disastrous in practice.

Once the shelf was removed, it was clear that stacking the washer and dryer was the answer to this awkward room. The space once occupied by the washer became available for easy-to-reach narrow shelves to hold laundry products within easy reach of a person of any height.

The second laundry room was an addition added to the existing room. In this space, the washer and dryer could be useful either side by side or stacked. Stacking the appliances in this instance improved the storage capacity of the room. Since only tall people could access cabinets above the washer and dryer easily, stacking would permit the space for a tall cabinet into which anyone could reach for laundry or cleaning products.

In this second situation, stacking allowed more visual space and made room for a folding table or desk, adding another definite advantage. This laundry room provides a corridor to the back yard and patio where the homeowners hold summer parties. As an additional bonus, this space make a great landing place for food, buffet style, keeping insects outside and off the prepared foods.

Changing out the old door with windows in the top half for a door with a full window from top to bottom floods the room with light, making it feel even roomier. Tall ceilings and more windows are the answer to many small room problems if they can be made to fit into the remodeling plan.

Stacking the laundry makes a lot of sense for most applications, but side by side appliances allow for a counter on top for folding, if you are lucky enough to have windows above the machines for light and air circulation and do not have to reach into upper cabinets.

Make sure you look at all the aspects of your situation, keeping in mind that light as well as storage need to be considered.
