Improve Restaurant Dining Room Service – Clear Finished Plates at the Proper Time

Recently, a chef called me on the telephone and posed a question: "When is the correct time to remove a plate after a customer is finished eating?" The chef who asked me the initial question had been sitting at the bar of his restaurant watching the dining room service on his off hours. There were three people at the table, one person had completely finished the plate of food, but the other two customers were still eating their plates of food. The chef felt that the "one finished plate" should have been cleared immediately by one of the busboys or waitstaff.

His inquiry was a simple restaurant dining room service question (quite legitimate) that may actually have more than one answer. It depends on the restaurant's "level of service," the "situation at the hand", and / or what the customer desires "at the moment." Certainly in any restaurant service situation, before clearing a plate, the waiter obviously must wait until the customer is finished eating from their plate.

Whether it is a completely empty plate in front of the customer, or if the customer has placed their knife and fork side by side in the middle of the plate, or if the customer has not touched their food in 20 minutes, the storeer must make the proper decision to clear the plate or not.

But to really answer this question in full detail, I had to ask some preliminary questions of my own, as consultants often do, especially about the desired level of service in the restaurant: Were there white tablecloths covering the tables? Was the floor completely rugged? What are some expensive items on the menu?

After receiving the some answers, I concluded that, yes, it was a fine dining restaurant. Therefore, my immediate answer to the chef's question was to wait until all of the customers are completely finished eating, then start the process of clearing. In most cases for a fine dining restaurant, if the one plate was only cleared while the other two customers were still eating, all three customers might have been offended thinking that they are being rashed out of the restaurant.

That is the "book" rule, yet a few more points must be added to this answer. What about the "situation at hand?" What about the customer needs "at the moment?"

The answers may actually warrant the act of clearing that "one finished plate" immediately. What if the customer had a train to catch and wanted to leave the restaurant quickly before the other two parties sitting with him / her? What if the customer asked to have the plate cleared? What if the customer, who had finished eating, put the credit card on the table wanting to pay and leave the restaurant quickly?

A big empty plate may get in the way of the customer signing the credit card receipt or counting out the correct amount of cash to pay the check. Even worse, the dirty plate may soil the customer's sleeve with an incidental sideswipe of the plate. In this instance, "by using common sense," the waiter can ask the customer: "May I remove your plate?"

In a casual dining restaurant service situation, where the plates are intense (and sometimes way too big for the tables), removing the plates ahead of time as customers may be the norm. There may be no other way to get the clearing job done before an intense entrée course arrives.

The main point is that there are always "standard rules of restaurant dining room service." But occasionally, the servers and bussers must use "common sense at the moment" to get the job done safely, cleanly and efficiently. Again, one must always politely ask before removing a plate as nothing could be more rude than trying to clear a plate while the customer is still enjoying it. But, unfortunately, these problems does occur with careless restaurant service.

This situation is the "gray area" of customer service which should be taken very seriously and discussed in every restaurant staff training class. Since restaurants are essentially a people business, there is truly an infinite number of situations that can occur. The trick is to anticipate the customer's and the pro-act in the hope that the end result will be a very pleased and satisfied customer.

Sauna Electric Bill: Infrared Heaters vs. Stove

One of the advantages that infrared sauna marketers talk about is a low electric power consumption of infrared heaters. I decided to make some calculations to check if this is the case and how one's electric bill will really differ if an infrared sauna or a conventional steam sauna will be used. I did estimates for a 2-person sauna and for a 6-person sauna.

To calculate how much will sauna use cost we need to know the power consumption of an infrared and conventional sauna. The average power consumption of 2-person infrared saunas is around 1600W and differs only slightly. For a 6-person infrared sauna it lies in the range from 2800W to 3600W so I took 3000W as an average.

A 1000W electrical device consumes 1kWh electrical energy in one hour of operation. Let's assume that you take an infrared sauna twice a week and heaters stay on approximately for 1 hour each time you use a sauna (sauna warm-up time plus sauna session time). If you pay $ 0.20 cent per 1kWh then infrared sauna operation in one month will cost you:

For a 2-person infrared sauna:

1.6 kWh x 1 hour x 9 times / month x $ 0.20 = $ 2.88

For a 6-person infrared sauna:

3kWh x 1 hour x 9 times / month x $ 0.20 = $ 5.4

To estimate electric power consumption of electric heaters for a traditional steam sauna I looked at some heater models. For a 2-person sauna, 4.5kW models look suitable, and for a 6-person 6kW will do (my estimation is based on a volume in cubic feet of 2-person and 6-person saunas). As traditional saunas take more time to heat-up, I assume a 2-hour working time for a session. So for a steam sauna we get:

For a 2-person steam sauna:

4.5kWh x 2 hour x 9 times / month x $ 0.20 = $ 16.2

For a 6-person steam sauna:

6kWh x 2 hour x 9 times / month x $ 0.20 = $ 21.6

So what conclusions can be drawn from these figures?

  1. An infrared sauna indeed consumes less electric power than a conventional sauna with an electric heater, but the difference is not dramatic if you use your sauna about twice a week.
  2. The difference between power decrees for larger sauna rooms. For my estimate a 2-person infrared sauna consumes about 5 1/2 times less than 2-person conventional. For 6-person saunas the difference is 4 times.
  3. If you use a sauna often (4-7 times a week) the difference becomes more significant. For 20 sessions per month difference between two 2-person sauna types in my estimate is $ 30, and an infrared sauna costs $ 6.4 per month.

But there is another issue with electric sauna heater for a traditional sauna. It is almost certain that installation of such heater will require some amount of electric wiring work (new outlet for higher voltage and amperage, GFCI, insulation), while with an infrared sauna you have a chance that an additional dedicated outlet will fit well.

Keep in mind that figures are different for other sauna schedules and electric power prices, so you may want to repeat the calculations for you own data.

Why Planks Are the Best Abdominal Exercise

Abdominal crunches do not flatten your midsection . Knowing this, you've probably just freed up 15 minutes of your workout time. Well, at least 5 minutes. Here's why, and here's what you can do instead.

Crunching activates the well-known, well-loved rectus abdominis muscle, also known as the six-pack (if its definition is visible through the overlying body fat and skin). When you work this muscle to fatigue, nothing happens to the body fat that is layered on top of it. Your body does not take abdominal fat and transform it into more six-pack muscle, nor does it use this fat as fuel for the exercise. Spot reduction is probably the most talented myth, yet we cling to it with great optimism. For some reason, we hope that if we keep trying to spot reduce it may indeed work. It will not, so change your focus. Cut the boring crunches out of your workout and expend your energy elsewhere.

First, spend 5 more minutes on the treadmill , or whatever is your chosen cardiovascular activity. Aerobic exercise elevates and maintains your heart-rate in an effective target zone over a period of time. After about 15 – 20 minutes your body switches from using carbohydrates to fat as fuel, since fat is a better fuel source. Now you are in your fat-burning zone for the rest of your aerobic workout. Replace your crunching time with aerobic activity, and you're in this zone for 5 more minutes.

Second, strengthen your core . The muscles of your core are deeper and more important than the rectus abdominis. Your core is your foundation of strength. These muscles connect the upper and lower body, and, like a chain, you are only as strong as your weakest link. Core muscles keep your spell and pelvis in proper alignment while you work and play, providing stamina and preventing injury so you can work and play harder.

If you're still attached to the idea of ​​spot reduction, know that core strength can affect the appearance of your waistline. Strong muscles in your core, as well as other key upper and lower body muscles, enable better posture when standing and sitting, giving the illusion of a trimmer tummy.

Planks are the best core-strengthening exercise . In a plank position, muscles in the upper body, lower body, and core are activated to resist the force of gravity and keep the body in proper alignment. Planks are challenging, because gravity is acting down on the entire backside of your body. This is a large surface area. Muscles strengthened during a plank are the same same muscles used to stand and sit upright throughout each day. There is an ideal plank position for every fitness level, and it's easy to progress to the next level when you are ready. Planks can be done anywhere and require no equipment. Using your own body weight to strengthen your own muscles is extremely functional, and since so many muscles are involved in planking they provide exceptional value for your time invested.

Here's how to do an effective plank. Start in a tabletop position on your hands and knees. Place your elbows on the floor, directly under your shoulders. Press your forearms into the floor. Broaden across your mid back, creating distance between your shoulder blades. Straighten and extend one leg back, tucking your toes under and keeping your kneecap off the floor. Repeat with the other leg. Your pelvis is level with the floor – not sagging nor spiked to the ceiling. Engage your abdominal (pull your navel to your spell) to resist gravity. Remember to breathe. Hold for 20-60 seconds, building your endurance over time.

There are many variations to the basic plank, so making the exercise more challenging. For example, you can dip your hips from side to side, working your oblique abdominal muscles. You can alternately lift one foot off the floor, which makes the remaining leg (and core) work harder. Make sure you do not compromise good technique for a higher intensity variation. If the basic plank feet too difficult, place your knees on the floor instead of the toes. Only hold the exercise as long as you are able with good technique.

Be warned there are posts being sold that are decorative and do not support the minimum weight requirements.

Balusters are what fill the space between the handrail, posts and the stairs. They also go by the names of spindles and pickets depending on the railing type and use. There are many styles and options available depending on the home style you want to create. Some material options are wood, metal and glass on most stair cases. Balusters typically run vertically with the posts but modern designs have them going horizontally and in many direction in the case of architectural iron balusters. As a rule of thumb you want the spacing of the balusters to be tight enough that a 4 3/8 inch ball cannot pass through the spaces so that a small child cannot slip through.

Soldering Flux – The Stained Glass Magic Elixir?

For those of us that work with stained glass, "soldering flux" is one of those "gotta use it" items that we know we need, but we just do not like to talk about. Shhh, it's secret stuff! Whether we use the liquid, prefer the paste, or swear by the gel, we understand "what" it does, but we really do not know the "how" or the "why". Today, I'll attempt to fill-in the blanks, and answer those questions.

The way I see it, fluxes should not be categorized by their form factor: Liquids , pastes , or gels all work well, and it's very much a matter of preference which to use. The addition of glycerin or emulsifiers can change the form factor, but they really do not participate to a large extent in the chemistry that makes a flux "flux".

Which begs the question, "What does a flux actually do?" During the soldering action, a flux is responsible for three tasks:

  1. Dissolving of the metal oxide (MO) layer of the metal,
  2. Protecting the metal surface against further oxidation, and
  3. Enabling the "wetting" action of the solder, by lowering surface tension.

Some may argue that a fourth task might be, "creating a strong bond between the base metal and the solder", but I excuse that by the time the bonding takes place, the flux has done it's job, and has left the scene. And this is really the "why" answer; we use flux so that we can create a strong bond between the foil (or came) and the solder. In other words, we want good solder lines .

In order to understand "how" flux performances it's magic, we need to categorize them according to their chemical composition. I prefer to break fluxes down into three categories this way:

  • Highly-active, acid-based fluxes,
  • Rosin-based environmentally-friendly "safety" fluxes, and
  • Mild restoration fluxes.

Let's look at each of these in detail:

Acid-based fluxes
This category of fluxes includes most of the "everyday" fluxes used by glassers. They contain one or more salt compounds, typically ammonium chloride (aka, Sal Ammoniac) and / or zinc chloride (aka, Killed Spirits), which are highly reactive with the metal oxides (aka, tarnish) on the surface of foil or came. These fluxes usually also contain a strong acid, such as hydrochloric acid, as a "pickling" agent.

One note about acid-based fluxes; they must be removed from your stained glass project, by washing with soap and water and / or neutralizing with "Kwik-Clean", after soldering is complete. If the flux is left on, "white mold" will develop over the course of time on solder lines. This "white mold" is not really "mold" at all, but a continued reaction between the flux and the base metal, resulting in a moldy-looking formation of salts; namely lead nitrate (a carcinogen) or stannous chloride .

Rosin-based safety fluxes
A second type of flux, one that I prefer, is made from certain species of pine trees, specifically the pine tar from these trees. If we "distill" the pine tar, we end up with "rosin" (aka, colophony), which is a blend of mild acids and other compounds. If you've ever heard of "rosin-core solder" used in electronics, this is the same stuff wrapped in solder, albeit in a slightly different form factor. (Note: rosin-core solder should not be used for stained glass).

I like these fluxes because they are environmentally friendly; you are not washing zinc chloride down the sink when you clean your project. And because they are milder, they can be left on your foolish or came for a longer time, without fear of pitting or corrosion.

Cleanup is easier with a rosin-based flux, because it easily dissolves in water, unlike the "greasier" acid-based fluxes.

Mild restoration fluxes
These fluxes are used for restoration work, primarily lead came. They have a higher pH, and as a result, are milder. The fluxes that fall in this category are oleic acid and steric acid .

They are also a good choice for beginners learning lead came, but are not recommended for copper foil. They do not have the punch needed to pickle the copper.
