Growth hormone is an anabolic protein structure that is responsible the rate at which our bodies grow during childhood. The Human Growth hormone is one of the most important hormones with it's influence affecting many of our bodily functions, including;

– calcium retention in the bones
– increased muscle mass
– reduced fat mass
– stimulation of the internal organs, including the brain

The major variant of the human growth hormone is a protein made up of 191 amino acids, although other variations have been observed. But no matter which variant you look at, every version of HGH begins in the same place; the anterior pituitary gland. Based on signals from the hypothalamus, the anterior pituitary gland will "synthesize and secret GH in a pulsatile manner". The HGH will then be either absorbed by the liver, where it will stimulate the release of IGF (insulin-like growth factor hormone) or be absorbed by tissues that have HGH receptors, such as fat cells, muscle cells, and bone cells.

In the liver, HGH will stimulate the production and release of IGF. This hormone is responsible for all of the growth promoting properties of HGH as it will bind to cells that have metabolic abilities and either promote their growth (as in the case of muscle cells) or promote their destruction (as in the case of fat cells) . IGF also has a stimulatory effect on bone cells to promote bone growth.

If directly absorbed by tissue cells, HGH will attach to pre-existing receptors through the body and work similarly to IGF, by either stimulating a cell to grow or stimulating a cell to destroy itself. HGH has been known to have an effect on fat, protein, and carbohydrate metabolism through the body. Protein metabolism is stimulated positively resulting in the body's increased amino acid uptake, increased protein synthesis, and reduced protein breakdown. Fat metabolism is stimulated negatively resulting in the body's breakdown of triglycerides (fat molecules) to be used for other purposes through the body. Carbohydrate metabolism is stimulated negatively so that the body's glucose levels are maintained but this method is done in a coordination with insulin and many other hormones that are used to regulate blood sugar levels.

When naturally allowed to regulate itself, the HGH is a remarkable hormone that has an affect on almost every cell on our body, either directly or indirectly. It's role is most noticeable in the first few years of our lives when we grow at astonishing rates, however, even in adulthood, our pituitary gland still secretes significant amounts of HGH which helps regulate everything from our blood sugar to our fat deposits. Artifical HGH has similar results of natural HGH but because of the complexity of the hormone, it is often advised that artificial HGH only be taken if prescribed and monitored by a physician. Dietary supplements which help release reserves of natural HGH are more likely to allow the body to use it's natural pathways and thus allow the body to regulate itself more closely. In most cases you will find the softwood lumber grades range from A to D, with A being the best quality wood available for just about any project.

A is normally wood with small knots, which are tight and this type of wood is often using for shelving, siding and building.

B consists of more knots per side, they are bigger than the A grade, providing customers with a slightly cheaper option when using the wood for furniture and siding.

C isn’t the best quality and should not be used for building. This softwood lumber has even more knots than B, often not tight and is best used for crates and packaging materials.

D is the lowest option and is brimming with knots, blemishes and splits. This wood is best used for packaging materials. While still durable enough to use as a crate, it is not the best option for building or furniture making.

The next softwood lumber grade you will notice stamped on your wood is the grain. VG will stand for vertical grain and will give you an indication on the overall design of the wood. Now you will also notice a stamp which will be S4, for example, this means the wood has been surfaced on four sides.

The wood species should also be included in the stamp, now this can start getting confusing, because you will see the softwood lumber grade stamp on the wood and there will be letters and numbers, but once you understand what they are all for, it will help you differentiate the different wood species, grades, surfacing and moisture content quickly and easily.

Ensure you only purchase from a reputable supplier who ensures they provide high quality wood products. This is important because you don’t want to end up with a poor quality wood when using it for the main structure of a home.

A lot of us are often given blurred visions of certain food preparation techniques that we forget many vital processes; thanks to commercialized quick-to-eat food products that make us want to pop them in the oven and voila! Here are a few simple cooking tips that you might find handy when you do cooking. Preparing ingredients are sometimes tedious work – Just like washing vegetables, peeling prawns, washing shellfish, dressing the sirloin and so forth. If you know what’s best for yourself in the kitchen, you might be able to run away from certain fuss by using these food techniques:

  1. Salt your water when you’re hard-boiling eggs The trick to easy-peel hard boil eggs is actually adding in salt to lukewarm water, turn on the fire and start cooking the eggs. When your water is boiled, turn down your fire to simmer. Constantly check your eggs for cracks – Too hot of the water will crack your eggs (and if you want to save gas by putting in hot boiling water to boil your eggs, you might just crack a lot of them if you’re boiling in a chunk); salt your water by adding in around 1 handful of salt to 5 liters of water. The salt will lengthen your boiling time but it’ll make your life 100 times simpler.
  2. Keep your knife hot when you’re slicing ‘vulnerable’ food items The trick to making the perfect slice for eggs or cheesecake (and some chocolate products) is to keep your knife hot, not warm. Stainless steel do not keep hot temperatures well, and looking at your thin chef knife, it won’t keep it for long either. Clean your knife, dip it into hot boiling water for a while or put them over naked fire then make your incision – You’ll notice that it makes a very clean cut.
  3. When you slice eggs, keep the yolk on top Hard-boiled eggs are best sliced (usually into half) from their yolk section first. Always look for the yolk, then make your incision there. Slicing too far away from the yolk makes it hard for you to aim well – Also makes your egg portions uneven. In certain cases where you can’t see the yolk or it’s already out in the open, just follow No. 2 and do it your way.
  4. Use egg whites to ‘smoothen’ your chicken If you’re marinading chicken, you can also add egg white into your marinade and keep them inside. For example, one whole chicken (portioned into 8), and one large egg white. After cooking the chicken, you’ll notice the skin is actually smoother.
  5. Italian sauces are best left for a day before consumption Many homemade Italian sauces are great – Even better if you ‘age’ them for a day. As liquid evaporates from your sauces (giving you a more focused and intense flavor) and/or incorporates with other ingredients using its naturals, these sauces will not lose its flavor for a day but gives you a bigger punch the next day. Best few examples are basic tomato sauces, pesto and stocks like Velouté (white stock – Can be vegetable, fish, shellfish or chicken) or (X – can be any vegetable) Concasse.
  6. For a better Parmesan, let it ‘sweat’ Many cheeses cannot be done this way, but for the special Midori brand Parmesan Cheese in a block, (found in Jusco & Cold Storage and sometimes Tesco) cheeses can be left to sweat and made better. Here’s how you do it – Open the packaging but only remove the top part. Leave it outside on your dinner table (under 20+C room temperature) and make sure it has no contact with sunlight and rodents. Keep it that way for 2 days – Now taste it. It’s different.
  7. Let your Chinese Celery and/or Coriander live longer Putting them in your fridge alone (with paper or plastic wrap) will kill them fast. Get a small ‘deep’ tupperware or even a Milo tin, add water in it, and let them sit inside (with roots below). This will lengthen their shelf life.
  8. Remove chicken skin with one incision and one pull If you need to remove the main chicken skin from your whole chicken, do this: Use a sharp knife and turn your chicken breast-side-down. Make a straight vertical incision along the ‘backbone’ of the chicken, then tear the chicken skin apart. This should remove most of its skin (except for the wings).
  9. Non-stick a pan with food ingredients or few techniques Heat/Temperature control is your best technique. If you need your pan to be non-stick (but it’s not labeled or sold as non-stick), you can do a few things – Heat your pan thoroughly before cooking (dry), fry a full egg before cooking, cook a stick-able ingredient until the surface is cooked before touching it (with high enough heat), oil your pan and heat the oil (then remove it and place it in another container) before cooking and fry beansprouts or coconut husks before cooking.
  10. Remove the ‘new’ smell from your Pan or Wok You can try this few ingredients. Don’t bother washing it too many times to rid the smell because some ‘cheap’ pans don’t work. You can try heating the pan to the maximum then pouring hot oil into it and throw away, fry beansprouts or coconut husks, leave it heated under hot charcoal for 30 minutes, make a simple ‘stew’ and throw them away. All of these works, but if you’re still getting the smell, then you know that pan won’t last long.
  11. Getting ‘rust’ marks out of your pans and woks Chinese woks are famous for this, especially when they are old. You tend to leave your wok to hang (with some water intact) and you come back and find your wok has rust marks. You can use a few methods to combat this problem: After washing your pan/wok, use a kitchen towel and some oil then rub enough oil on it – This will enable water to not oxidize the metal surface of your pan/wok. Alternatively, you can also heat your pan/wok to the maximum, and then leave it to cook (do not let it come in contact with water. Wash before heating your pan/wok.
  12. Don’t store shellfish into the fridge Storing shellfish into the fridge is the wrong way to go (applies for freshly live ones). What you can do is wash them under running water for a while to remove the dirt, place them in a container (without covering) then get a wet kitchen cloth and cover them. Make sure they’re in room temperature and is not kept for more than 1 1/2 days. Do this for live clams and local mussels (Malaysia).
  13. Don’t use mayonnaise straight from the tub/container Commercialized mayonnaise taste absolutely ridiculous if you’re not challenging it with another strong-tasting ingredient. What you can do to ‘tame’ its flavor is to add in milk, salt & pepper, whisk them well to a thinner texture. If you’re adventurous enough, take a small portion of mayonnaise and add in a few more ingredients. You can add garlic, tomato/chilly sauce, Worcestershire sauce (Lea & Perrins), Maggi Seasoning Sauce, Jalapeño juice, Pickles, cream, sugar, brine, onions, carrots, cabbage or anything you can find in the fridge. Its tastes are subjective, so be careful.
  14. Test your knife with a tomato Want to know how sharp is your knife but do not know how to test it? Here are a few simple tricks for you to test them out: Slice a not-so-young-and-fresh (when pressed is quite soft) tomato, and you should be able to slice it without putting pressure on your knife blade. Another way is to slice big, yellow/red onions. If you cry fast, then it’s either your techniques or your blade. Another great way of testing is to slice plastic. Extremely sharp knives slice plastic bags almost too easily – Without even having to add any pressure. Simply move it along the plastic bag and see if it goes through.
  15. Don’t wash freshly harvested mushrooms Washing freshly harvested mushrooms can be disastrous (to its natural flavors). If you’re looking for hygiene, PICK IT FROM A MORE HYGIENIC PLACE or get it from Tesco. Either way, they work better. If you’re not particular, simply use a pastry brush and brush off its sand. For certain mushrooms like fresh button mushrooms, peel their ‘outer’ skin before cooking. You can use that skin for your chicken stock.
  16. Keep cockroaches away with this leaf Use ‘Pandan‘ (or called Screw Pine) leaves to keep cockroaches away. They work extremely well. Pandan/Screw Pine leaves has hundreds of usage in thousands of recipes and home-uses.
  17. Reheat your bread in the microwave oven with some water Put in your bread and a microwave-oven-friendly bowl or glass filled with water in the microwave oven and give it a quick 20 second high heat. This will not make your bread lose too much of its moisture.
  18. Make your banana grow naturally juicier What you can do is to hang your bananas – Using a string or a hook, hang the banana on its comb and let it sit on air – This will give your banana a juicy boost and also make it brown evenly. Placing it on cold surfaces will blacken the skin (in one area first then spread to more later) faster. Bananas are naturally ‘bomb-smoked’ first in the farm before it goes on sale (to enable boost and uniform ripening), and when it’s done that way, your bananas don’t taste as good as natural ones.
  19. Keep your rice from rodents and stick-free When you’re keeping uncooked rice, leave a few pieces of dried chilly in the container your store your uncooked rice. This will keep insects and rodents away. Besides, adding fresh dried chilly into your rice cooker will also make your cooking easier – The rice won’t stick to the bottom. Make sure you don’t cook the dried chilly (or make it come in contact with oil) first or it won’t work.
  20. Naturally cook your ingredients a few times faster If you’re adventurous enough, you can try packaging (in a plastic bag) a few unripe apples and some chilly. Put in 4 apples to 4 pieces of red chilly. Put them in a bag together and place it in the fridge. You’ll notice that the chilly ‘reactions’ actually ‘cook’ the apples faster. Although this is not entirely ‘proven’ scientifically to many Chef’s knowledge, it does work in certain cases.

As a full-time streamer on Twitch, Autumn Rhodes has made a name for herself in the male dominated gaming world. This Toronto based streamer, who started playing games with her dad at a young age, talks about her experiences in an industry not always open to the fairer sex.

1. How did you get into eSports?

I started playing video games at a very young age because of my father and my brother, and ever since then I’ve never been able to stop. When I was introduced to the eSports world I was astonished about how it all worked. Being a very competitive person, I decided it was time to take my love for gaming to the next level, and when I discovered and all the amazing possibilities I had in front of me.

2. What exactly do you do in the eSports arena?

I am a full time streamer on Twitch. I play games such as CS:GO, CoD, LoL, and so many more. I dedicate hours and hours a day to these games, always practicing, and always trying to be the best I can be. I’ve played competitively in many games and I always have such a great time doing so.

3. What do you think of women in eSports, specifically in your region?

I think the women involved in eSports around my region, which is Toronto, give a good name for all of us. They know how difficult it can be in this industry as a woman, and they work hard to maintain their image as not only a serious competitive player but as a woman who can play just as well as any man. Because Toronto has such a high population there is so much competition in the eSports world.

4. What has been some of your experiences of being in a field that has been dominated by males?

Some of my experiences in this field haven’t always been great, but other times they’ve been fantastic. I remember being in the Cineplex World Gaming CoD tournament last year, and as I walked into the theater the men were just shocked as to why I was even there. The male I faced was so terrified because he never had to play against a girl before and he didn’t know what to expect; it made him so nervous. Meanwhile, some other men at the tournament figured because I am a woman that I would easily be beaten because there’s no way I could be good at any games. Being in an industry where we’re told we “can’t possibly play video games because we’re women” is really disappointing in today’s society. There are just SO many men who hate on women who are involved in the gaming industry, and I don’t know if this is because society has taught people that ONLY boys can play video games or if some of them are just too ignorant to realize that our sex has absolutely nothing to do with our capability of being great at something.

5. What is your favorite thing about being part of the eSports community?

My favorite thing about being a part of the eSports community is how well we all understand each other. It’s such a great feeling going to competitions and events and having so much in common with everyone. We all can relate in one way or another.

6. What is the most difficult part of being in eSports?

The most difficult part about being in eSports as a woman is how so many men look at us. They rarely take us seriously and it’s quite annoying because we’ve worked just as hard as them or harder to get where we are in the gaming industry.

7. Why do you think it’s so important that women be represented in eSports?

I think it’s very important that more women are represented in eSports because we need to break the stereotype that it’s only a man’s world. SO many women avoid the gaming industry because of the fact that so many get harassed and bullied for showing an interest in gaming. It’s nice to see that people are finally starting to shed light on this topic and speak out about it.

8. What are your hopes for women in eSports?

My hope for women in eSports is that one day men won’t judge us for being a part of the gaming community and that they will realize we can play games just as well as them and even better. I can tell over the past couple of years more and more people are opening up to females in the gaming world, which is such a relief because it isn’t fair to the women such as myself who put so much time and dedication into competitive gaming to just be shut down because society says we can’t be good at games.

How to Cook Indian Foods – North India

You’ve probably read the previous piece on North Indian breads. This article focuses on North Indian cooking, which includes cooking style, spices used, terminology and some common foods.

North Indian cooking is nearly always quite spicy and uses a large number of spices in any given dish. The terms used for various dishes are normally descriptive of the food itself like Jeera Aloo for instance, which literally translates to ‘Cumin seed Potatoes’. Like most cultures there are also some misleading names like ‘Butter Chicken’, which is actually marinated chicken cooked in a tandoor and served in smooth, tomato gravy and doesn’t contain any butter. There are also terms which aren’t related to the food in question, like Pulao, which is rice cooked with spices and vegetables. The term sabzi (sub-zee) is used quite liberally when describing nearly any dry, vegetable preparation. The same applies to the term dal, which is used for most types of lentils. The term tari (tuh-ree) denotes gravy and is suffixed to the name of a dish when it has gravy.

In these days of fusion food, it is difficult to pin down a set of spices that a given region can claim. However, traditionally, north Indian cooking uses the following spices and herbs:

  • Cumin seed (Jeera)
  • Ajowan or (Ajwain)
  • Red Chili Powder I – Flavor over color (Lal Mirch)
  • Red Chili Powder II – Color over flavor (Degi Mirch or Kashmiri Mirch)
  • Turmeric Powder (Haldi)
  • Dried Mango Powder (Aamchur)
  • Coriander Seeds (Sabat Dhania)
  • Coriander Powder (Dhania)
  • Fresh Coriander Leaves (Hara Dhania)
  • Green Cardamom (Choti Elaichi)
  • Black Cardamom (Badi Elaichi)
  • Cinnamon (Dalchini)
  • Garam Masala – A set mixture of spices – roasted cumin, cinnamon, cloves, caraway seeds, nutmeg (and/or mace) and green cardamom seed or black cardamom pods. The composition of Garam Masala changes from region to region.
  • Dried Fenugreek Leaves (Kasuri Methi)
  • Black Mustard Seeds (Rai)

This list is by no means complete – there are many more spices used in every day North Indian cooking – the purpose of this article however is to provide a feel for North Indian cooking.

Different spices are used in different situations, in different ways. The flavor and characteristics of spices change if you’re dry roasting them, frying them, adding them before simmering to cook or after cooking.

Our first foray into traditional North Indian cooking could start with a simple vegetable preparation, which we could either call Aloo ki Sabzi (‘Vegetable Preparation of Potatoes’) or Jeera Aloo (Cumin seed Flavored Potatoes).

Cumin Seed Potatoes / Jeera Aloo


– 3 Large Baking Potatoes

-One onion, chopped fine

-1 tsp Cumin seed

-1 tsp Turmeric Powder

-1 tsp Chili Powder

-1 tsp Coriander Powder

-1 tsp Dried Mango Powder

-Salt to taste

-Chopped fresh coriander for garnishing

-Oil for frying


First peel your potatoes, dice and then boil in lightly salted water. Then drain and let cool. Heat oil in your pan and add the cumin seed. After 2 – 3 seconds of crackling, add the onions and fry, stirring lightly for about a minute on low heat. Now add all the spices, except the dried mango powder and mix well. Throw in the potatoes, which should be nice and firm now and toss well, so the onion-spice mixture coats the potatoes all over. Simmer for about 5 – 7 minutes. Finally, add the dried mango powder and toss the potatoes on high heat, till there’s a thick, spicy sludge adhering to the potatoes. Garnish with the fresh, chopped coriander prior to serving.

These can be served with Rotis, filled in toasted sandwiches or just eaten as is for a snack.

As you can see, this everyday dish uses 5 different spices and one herb. There are some traditional dishes that use up to 30 different spices! These are now (in most part) a thing of the past and cooked only on very special occasions.

As an example, let’s say we’d like to try our hand at cooking a simple north Indian dish without a recipe, simply going by the style. Obviously we’ll need some north Indian spices, the most common of which are Jeera (cumin seed), Haldi (turmeric powder), Namak (salt) and Mirch (chili powder). The first step, in nearly every dish is to fry onions as it is a staple in north Indian cooking. When pink/transparent, we add some spices and fry some more. This gives us a thick sauce to which we can add a little water if we wish. This sauce will coat the vegetables or meat we’ll add later. Here’s a simple example.

Onion and Tomato Sabzi / Pyaaz Tamatar ki Sabzi


-3 Large tomatoes, chopped roughly

-Two Onions, chopped roughly

-2 large cloves of garlic, finely sliced

-1 tsp Cumin seed

-1 tsp Turmeric Powder

-1 tsp Dried Mango Powder

-1 tsp Chili Powder

-Salt to taste

-Oil for frying


The process is really quite simple – we heat a little oil, add the onions, fry a little, add the garlic and continue frying till the onions are pink or translucent. Then we add the rest of the spices except the dried mango powder, mix well and finally toss in the tomatoes. The dried mango powder goes in at the end.

One major feature of Indian cooking is that vegetables are rarely left crisp or crunchy. They’re nearly always cooked till they’re very soft. This isn’t very good for the nutrition content of the veggies and I’d recommend cooking them till they’re just done and still have a bit of bite left.

The pan will be kept on a simmer for 5 – 10 minutes, till the tomatoes are cooked through. Finally we stir in the dried mango powder and it’s ready to eat! This dish is usually eaten with Rotis.

As you can see, the pattern is similar – fry onions (if using), spices, toss in vegetables, nuke them (or not) and serve. Now that we have an idea of the basics involved, let’s get on to the secrets!

The Cooking Methods (by Naheed)

Secret 1: Bhuno well.

This is an extremely important process and involves frying spices to extract most of their flavor. Remember not to overheat the oil (unless it is mustard oil, which has to be heated till it emits some smoke & does not froth when something is put in it). If dry powdered masala is being used, the oil should not be hot as the dry spices will burn. Some amount of water must be added if you feel the spices may burn. When making the masala, use onion paste along with ginger & garlic to which you will add other spices as required.

For meat however, the method is quite different. This is the last process for cooking meat in quite a few cases, or the process just before adding water to make the gravy. It is believed the real flavor of meat develops only if you devote upward of 10 minutes to this process. Meat releases some of its own fat which mixes with the spices and then the oil cooks the meat and helps the meat absorb the mixed flavors of the spices. How long to do so, is a question that has no fixed answer. As a guideline, stop when either the meat becomes too tender or the gravy becomes completely dry, or your guests start to get very restless. You will also notice that the meat & gravy tend to stick to the vessel if you do not stir them constantly. If they do, scrape it off; and if the gravy gets too dry, add yoghurt or water.

Secret 2: Bagharna

This is a simple process and is called Chaukna in Hindi. Here dry spices are added to hot oil and this concoction is added to a dish (e.g. Dal). Although a simple process, do not burn the spices. In fact it is advised that once you have added the spices, remove the vessel from the fire.

Secret 3: Dum Cooking

This is the art of slow cooking. It enables individual flavors to intermingle properly. This is also the method used for the last few minutes when cooking rice or biryani. In the old days, when food was cooked on coal or wood, the only way was to raise the distance between the flame & the vessel, or put the vessel in the dying embers, seal the lid of the dish with flour & put a few embers of coal on top of the lid. In dum cooking, it is essential the fire be at its lowest and the food will therefore take a while before it’s done. Rest assured that your patience will be amply rewarded. Thankfully modern cooking presents us with newer methods and one of the easiest is to put the whole vessel in an oven. If you do not have one, put a griddle (tawa) on the flame & then put the vessel on it. Also note that dum cooking meat will make the ingredients (meat, vegetables) exude the moisture or water within. A word of caution here: Try not to use a pressure cooker or the meat will not turn out right.

Secret 4: Frying

Simple you’d say. Well, yes it is. However, there are two types of frying. One is frying to cook and the other one to brown. For deep frying it is essential that there be sufficient oil to cover the item. For browning, the oil can be less but must be at a low temperature.

Secret 5: Using earthenware

Not only is earthenware cheap in India but it was also the first form of disposable crockery. Most desserts in India were traditionally served either on banana leaves or in earthenware crockery. Some of the better known five star restaurants in India still use earthenware. If you’ve noticed, tea at Indian railway stations is still served in earthenware glasses. Not only is it environmentally friendly, a special earthy flavor permeates the tea, which no cooking method can simulate.

Secret 6: Kewda Water

Kewda is the derivative of a desert plant with very fragrant leaves. The essential oil of this is heavily diluted in water which is used as a perfuming agent for food. Typically used in Firni and Zarda among other desserts and has no parallel.

The Ingredients

Secret 1: Dahi or Yoghurt

This is a wonder ingredient. Yoghurt lends a light buttery flavor to the creation as well as a light creamy consistency. For example, it is the base for some dishes like Rizala where the original flavor of yoghurt is completely transformed. Yoghurt when cooked transforms in taste to lightly sour and gives the gravy a creamy texture. All in all, it is an essential item. In a few dishes, it may be substituted by tomato puree but then the final result will be slightly different. Did you know vegetables cooked in yoghurt retain their shape? In fact in Dumpukth Fish, it is the yoghurt that preserves the shape of the fish. Also, at times if you have mistakenly added extra salt, add a splash of whisked yoghurt and cook for a while.

Secret 2: Onions

This is an essential ingredient in a lot of dishes and is commonly used for salads. A handy tip on handling onions is to remove the outer dry skin, cut in half and wash thoroughly to prevent your eyes from watering. Onions lend a sweetish flavor to cooking and are a common masala base. However when fried then mixed, the taste is totally different. So when the recipe says “fry onions”, you’d better fry them.

Secret 3: Cumin

There are two types of cumin seeds. The common white cumin seeds which are cheap are used mainly in vegetarian dishes. They are more often than not fried to get their flavor out. Sometimes as in a raita, they are dry roasted on a tawa and then ground. However, the more expensive black cumin seeds or Shah Jeera as they are commonly known as, are quite different in taste and flavor. The two are rarely substituted. Most restaurants substitute them in rice preparations, but then, what you get is something totally different.

Final Recipe

Now that we have quite a good idea of what’s involved in North Indian cooking, perhaps a slightly complex recipe is in order – Nihari. This is definitely not one of the dishes that one finds on the menu of five star restaurants. This is one of the dishes eaten with a lot of passion by all. In fact to have Nihari one must have the zest to wake up before dawn because it is a very hot meal and in most places where it is served, the service is over by 9am. It is a delectable broth of meat, cooked over a slow fire, mostly overnight and eaten in the early hours of the morning with a tandoori roti and an assortment of fresh herbs accompanied by loads of lemon. The meat is fulfilling and the broth is had as a refreshing and a rather hot soup. The other reason why one has it as a breakfast meal and that too only in winter is because it makes you feel very thirsty and rather warm. Don’t tell me I didn’t warn you.



  • 1 kg Nihari meat (or any other meat that’s available)
  • 250 grams Onions, sliced
  • 3/4 cup Ghee
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • 2 tbsp dry roasted chickpea flour
  • 1/2 – 1 tsp red chili powder
  • 1 tsp Coriander powder
  • 1/4tsp Turmeric powder
  • Salt to taste

Spice mixture

Grind together the following:1/4 tsp. dried ginger, 1/4 tsp. mace, 1/2 tsp. fennel, 1/2 tsp. white cumin seeds, 2 large cardamom, 4 small cardamoms, 4 cloves, 6 black pepper seeds


Preparation time 30 minutes | Cooking time 2-3 hours

  • Add 2/3rd of the onions in moderately hot oil and when the onion goes soft add ginger & garlic paste along with ground coriander and turmeric powder and let it fry for about 3-4 minutes or until the oil comes on top again.
  • Add the meat and cook over slow fire. The meat will let out its own water.
  • When it is semi cooked, add the chick pea flour to 2 cups of water and leave the broth to cook over very slow fire for at least 45 minutes.
  • The slower you cook the more flavors you will draw out.
  • Keep the pot covered but no pressure cookers please.
  • When the meat is as tender as it can get, add the spice mixture along with the leftover onions.

On a parting note, while cooking methods remain largely consistent and typical, knowing the spices will help tremendously. So while you’re cooking go on and add that sprinkle of black mustard seeds to hot oil and watch them crackle or throw in some curry leaves and savor the change in flavors!
