Filter Vs Cafetiere Coffee

What is the best way to brew coffee? Well I’m afraid to say I’m sitting on the fence with this one. Each brew method produces a different taste so in my book they’re all good (well most of them). It’s like cooking an egg: fried, poached, scrambled, boiled; they all taste different.

Today, I’m going to focus on filter (sometimes called drip) and cafetiere (French press), as they are the two simplest (and cheapest) ways to brew coffee at home.

Taste Differences

Body

The cafetiere produces a rich full bodied cup in comparison to the filter method. With a cafetiere the grounds are steeped in hot water (like brewing tea) and this extracts more compounds from the coffee. Steeping extracts oils, which add a creamy/buttery rich flavour to the cup. With the filter method hardly any oils are present.

So what is body and what difference does it make to the taste? Well body refers to the feeling in your mouth. Filter coffee, with its lighter body, just coats the tongue as it gently slivers down the back of your throat. Whereas, the fuller bodied cafetiere, coats the whole of your mouth making the flavour far more enduring.

Flavour

As a cafetiere extracts more compounds from coffee than a filter does, it means that there are much more flavours in the cup. All these flavours can become a little muddled or mixed by our taste receptors – not in a bad way. These flavours work in unison like an orchestra, but it’s harder to pick out individual instruments.

Filter coffee has less flavours so each flavour has more clarity; (carrying on my musical analogy) like a rock band, you can pick out the individual instruments – vocals, drums, guitars etc. So typically, filter coffee produces a cup that is simpler, yet has a more defined flavour.

Sediment

There is no way of avoiding some sediment in your cup using a cafetiere. On a cafetiere, the holes in the mesh filter (on the plunger) are wide enough to allow partially dissolved coffee solids to pass through. Now most of these solids form what chemist call ‘colloids’. They remain suspended in the brew and add flavour and texture. Unfortunately, some solids sink and become sediment in the bottom of your cup.

Filter coffee produces a much cleaner cup as the holes are much much finer. Paper filters produce no sediment whatsoever and metal filters produce little or none at all.

And the Winner…

I told you I’m sitting on the fence (well almost)! They both produce different tastes but if I had to pick only one, then I’d choose the cafetiere. Filter is good first thing in the morning and after a big meal, as it’s less filling. But there’s something deeply satisfying with a cafetiere.

Masonic Symbol Meaning of the Level

THE LEVEL

“That which is altogether just shalt thou follow,

that thou mayest live, and inherit the land

which the Lord thy God giveth thee.”

In Freemasonry, the level is the symbol of equality, not only among members of the Craft, but of all humanity. The fraternity teaches that mankind is the offspring of God, created in His image of one blood. As such, each person is born with certain inalienable rights to life, liberty and the pursuit of happiness. Those who wrote this country’s Declaration of Independence and Constitution were not implementing man-made justice when incorporating such sentiments into our laws – they were enacting fundamental principles given us by the Most High.

Freemasonry’s love of equality does not mean that it also endorses the destruction of distinctions based upon merit, or that rank is somehow inconsistent with the Craft’s belief. Without question, all men are created equal by nature. Each is subject to the same infirmities associated with human existence. All are embraced b y God as His children and are ultimately destined to be judged equally and impartially according to His immutable laws. But some men, by training, discipline and the proper use of their God given talents rise above the ordinary and are entitled to enjoy a different status. Every man, woman and child has the opportunity to so advance, which makes this equality of opportunity not only consistent with divine and human laws, it is the very cement and support of civil society.

The level also serves as the emblem in the jewel worn by the Senior Warden of a Masonic lodge and reminds those in attendance at a Masonic meeting that all have gathered on the level. That phrase has also acquired significance in the day-to-day parlance in civil society. When one speaks about another as being on the level, he generally means that he believes the person about whom he is speaking to be truthful, honest and forthright.

Although Freemasonry did not invent those virtues, it inculcates them from the time a candidate for Masonic degrees first knocks at the door of a lodge until he is translated from this imperfect life to that celestial lodge above where the Supreme Architect of the Universe forever presides. Albert Pike, as well as other Masonic writers, has gone so far as to say that Freemasonry is the first apostle of equality. During this Nation’s formative years, Thomas Paine wrote an essay complimenting the Craft for its unflinching commitment to a government without tyranny, or religious restriction. Yet, there is something more about the significance of the level – something that holds a more personal about the meaning of the level for each and every Mason.

Masonic lodges have a sweet smell about them. Brotherhood is in the air and the principle of equality finds a perfectly welcome spot at the altar of obligation and prayer. Those sanctuaries are no different than any other meeting place, as far as furnishings go. But, the people are different. In a Masonic lodge one man regards another person whom he has just met for the first time as a long-lost friend. The Masons who gather there were not born to be different from other men. Each has his own cross to bear; each has enough sin in his past to condemn him. Yet, there is something special about the purpose-driven lives noticeable in the people who comprise the congregation. Harmony is worked at; kindnesses are freely given; smiles are easily flashed; and, men care not whether you reside in high society, or mingle daily with the middle class that makes up your neighborhood.

Within those lodges men meet upon the level; the rich and the poor; the high and the low; who, as created by one Almighty parent and inhabitants of the same world are to aid, support and protect one another. Men of diverse creeds, different interests and disparate occupations share a mutual respect and true regard for each other. Freemasonry lifts those men to a higher level than they would have ever believed themselves capable of reaching. Once there, each Freemason more clearly sees and understands the true meaning of the word “equality.”

No two people are, or should be treated differently in a Masonic lodge. Impartiality and fairness are, or should be accepted as routine by all members. For that reason alone discrimination is unknown among the members of the Craft, sincerity and plain dealing distinguish them; and, with heart and tongue they join in promoting each other’s welfare and rejoicing in each other’s prosperity. No one is precluded from participating in the lodge’s activities and equal access is given to the hidden mysteries.

Yet, the virtues symbolized by the level are not intended to be limited to the Masonic lodge room. The concept of equality, or of treating others with equal respect, is to be put into action by every Mason outside of the lodge room. At work, when others jump on the bandwagon to crucify a fellow worker, the Mason among them may be expected to demand common courtesy, compassion and empathy. In social circles when the conversation turns to criticizing a friend who is not present, the Mason among them may be expected to encourage restraint. When anger, disharmony, or disrespect of any nature rears its ugly head, it will not be a surprise to those who know that by word and example the Mason in the crowd promotes peace, harmony and goodwill.

Thus, as with all other virtues taught in Freemasonry, the lessons in equality taught by the level, instilled and nurtured within a Masonic lodge, achieve the greatest good for all mankind when lived in the world by the Mason himself. It comes as no surprise to followers of the Craft that Freemasons expect of themselves that each will be the change they expect to see in the world. In so becoming, each Mason brings light into the world and yields himself to become God’s vessel for extending extraordinary grace to all creation.

DIY Projects for the API Lunchbox

One of the coolest trends in recording equipment in the last decade or so has been the emergence of API’s 500-series “Lunchbox” format. The Lunchbox and other 500-series racks can provide power and housing 6-11 modules in a single 3RU chassis. These racks are great for DIYers like me love building electronics but don’t possess the time, skills, or tools to build their own racks.

Of course, DIYers have found ways to have their own fun with the 500-series. Eisen Audio’s DIY500 was the first module to the scene. It provides a PCB, faceplate, and the other hardware needed to build a transformer in/out, DOA-based (API, Twin Servo, et al) microphone preamp.

The next to arrive were ClassicAPI’s preamps in the vintage API-style. Created by a 1976 API console owner with a penchant for authenticity, the VP25/VP26 and the VP312 are precise clones of original API circuits. ClassicAPI has also worked with other manufacturers to replicate the original API iron and opamps. All of this makes the VPxx to closest thing on the market to a real vintage API preamp, closer even than what is offered by API today.

A couple of years ago some DIYers started talking about creating a modular system specifically for DIY. The result is 51x, a format with the 500-series form factor but with added +/-24v power rails. And last year the 51x Alliance brought out the 51x Alliance 511 Rack, a DIY, 3RU, 11-space rack with the choice for a 2RU power supply. Now the DIY community has their own modular rack with a hefty PSU and the correct voltages to power Neve preamps, a John Hardy DOAs, and so on.

Since the Alliances big announcement, the community has exploded with new modules for the format. Some, such as Don Classics Neve clone, Igor’s SSL buss compressor, and Classic API’s VP312DI have already been release. Others are on their way: [silent:arts] posted pictures of an optical comp based on the D-AOC and Igor intends to release a kit for an 1176-style compressor. Archers in the Roman Army

Ancient Roman warfare was built on the back of the legion. The Roman war machine evolved around the legion like the ancient Greek’s war machine revolved around the Phalanx. Rome was built on the back of its legionnaires, they suffered some setbacks but overall the legions swept away any enemy that confronted them in the field. And though the legions formed the major part of the Roman army, the Romans also used auxiliary troops to great effect. Among these troops were the archers.

Archers were a major part of most ancient countries war machines. The Romans didn’t use them to the same extent as other ancient civilizations like Egypt they did recognise the importance of archers in the ancient battlefield and placed them with great skill alongside their legions. On Trajans column the auxiliary archers are dressed in their native clothes. Most of Rome’s archers were recruited from the middle east, a region that had perfected the use of the bow as a weapon of war. As Crassus, a Roman commander, was to find out when he led an army to defeat at the hands of Persian archers.

What is a Sinus Tract? – An Insight of the Sinus Tract

A sinus tract is an asymmetrical type of passageway that leads from within the bones to the surface of the skin. This channel is also called a fistula. It can also be said as a drainage pathway from a deep focus of acute infection through tissue and/or bone to an opening on the surface.

A contagion or a decompression of a synovial joint in rheumatoid arthritis or common fistulous rheumatism can also lead to a formation of Sinus tracts.

When a profound disease develops, the body restrains the disease, stopping it from contaminating the bloodstream. Pus develops in the area that is weak. As it continues to develop, a slender channel is formed in the weak spot. In time, the channel reaches the surface of the skin, where it bursts. When the pus burst the pressure is also relieved thus the patient feels less pain and may not have any fever Sometimes we see that an infection develops in a long bone and it worsens, over months. Ultimately the infection gets to the skin, forming a sinus.

A sinus tract is a small uncharacteristic channel in the body. A tract usually goes from the cause of infection to the skin’s surface. A sinus can be developed after an abscess is cleared (by itself or by medical treatment), then one of more of the small openings (tracts) connect the cavity to the skin surface. But in some cases some people can develop a pilonidal sinus without ever having a pilonidal abscess.

Occasionally draining cutaneous sinus tracts in the area of the face and neck may be caused by chronic dental infection. Intraoral sinus tracts owing to dental infections are quite widespread. Nasal dermoid sinus cysts are very widespread congenital midline nasofrontal masses, but on clinical inspection they are very easily misinterpreted to be sinusitis. Sinus tracts are best demonstrated on MR imaging. Small tracts, however, may be difficult to find. T1 weighted images with intravenous gadolinium may be more sensitive in finding smaller abscesses and sinus tracts.

High School Wrestling: Dominating in All Three Positions

Most wrestlers have a favorite position whether it is standing, on the bottom in the referee’s position, or on top in the referee’s position. Nonetheless, a wrestler wants to be strong in each of these positions. In fact, a wrestler wants to dominate all three of these positions. How can this be accomplished? Let’s explore.

Standing

The first thing to consider in the standing position is one’s stance. Your stance should be fairly low and wide. You want to have a stable base and yet be very mobile. You want your head up and your shoulders square. You obviously don’t want to be looking at your feet. You want your eyes centered on your opponent’s body. You want to be somewhat on the balls of your feet. You don’t want to be on your heels. You should have your hands up in front of you to guard against getting taken down. You should never be standing straight up and leaving yourself open to a takedown from your opponent. You should utilize a comfortable but effective stance. You need a stance that allows you to attack as well as defend. This is basic information.

Lee Roy Smith (brother to John and Pat and an extraordinary wrestler and coach in his own right) notes, “To successfully execute takedowns, you must control contact. Your tie ups or setups will determine whether or not you can successfully execute your takedowns. So, setups should not be overlooked. They are an integral part of gaining control and getting the takedown.”

You can control your opponent’s reaction in a variety of ways. Controlling your opponent’s response gives you an advantage. For instance, if you pull his head down you know he’s going to pull it back up; then you shoot after he reacts.

Ways to Control Contact

  • Pull – He pulls back.
  • Push – He pushes back.
  • Twist his shoulders – He twists back.
  • Pump and fake – He reacts because he thinks you are going to shoot.

Coach Tommy Pavia likes to talk about making an opponent “heavy” on one foot. By grabbing an opponent’s arm and pulling him forward, for instance, you can force your opponent to bring the leg toward you that you want to attack.

Two-time NCAA wrestling champion Cary Kolat emphasizes snapping your opponent’s head down a lot to tire his back muscles and eventually his leg muscles to wear him down. In addition, snapping your opponent’s head down takes his eyesight away and you may be able to capitalize on his reactions as he tries to come back up. Snapping the head down can break his stance and position.

There are many ties a wrestler can use to move his opponent around and set up takedowns.

Common ties include:

  • Collar and elbow tie
  • Double elbow tie
  • Underhook and overhook
  • Double bicep tie
  • Two-on-one or Russian tie

You probably know that you need to use motion and level change to execute successful takedowns. You never want to move backwards or retreat. You may get called for stalling. You want to move from side to side without crossing your feet and move forward in a stalking manner. You need to control your opponent’s movements and determine where the action goes on the mat. In addition, a good time to shoot is after you have blocked an opponent’s shot or immediately after you’ve had a takedown attempt blocked. Re-shots are very important.

Your most common takedowns are going to be doubles and singles. They are basic and they work a significant percentage of the time. You need to drill doubles and singles often. There are several ways to set these takedowns up and finish them. You need to know how to perform a high crotch, ankle pick, and other takedowns as well.

It’s important to learn to finish low and cut the corner because you won’t always be able to lift your opponent’s leg off the mat. You may capture a leg and yet be stuck down on the mat. You need to get on your toes, perhaps snake his leg, and grab the near or far ankle while cutting the corner and coming around to score. Momentarily being stopped doesn’t mean you can’t finish the shot and score. Practicing this position is very important.

You need to have at least a rudimentary knowledge of tosses and throws as well. You need to know how to execute a headlock, hip toss, and arm toss. Sometimes an opportunity for a toss or throw arises when you didn’t even have that scenario in mind.

You, of course, need to defend against takedowns as well. Sprawling is basic but absolutely essential. You need to sprawl and peel your opponent’s hands off. Your legs go back and your hips go in. You may need to crossface and whizzer as well. You execute a crossface by sprawling the legs back, reaching across your opponent’s face, grabbing the far arm, grabbing the near ankle, and circling behind. This is basic material but important to know and perfect.

Top Position

When in the top position, you want to control your opponent and prevent him from getting an escape or a reversal. In addition, you ultimately want to turn him to his back to score points and pin him.

Dan Gable (Dan Gable’s Wrestling Essentials DVD) and Art Keith (author of Successful Wrestling) both emphasize being able to flow with your opponent’s movements. Holding on to your opponent tightly is not necessarily the most appropriate way to control your opponent from the top. Art Keith likes to talk about keeping an opponent “in your lap” to maintain control of his hips. Dan Gable likes to compare flowing with your opponent to riding a bucking bronco. You need to get “in tune” with your opponent and anticipate his movements.

You do, of course, want to control some of your opponent’s movements and eventually break him down. Just as in the standing position, you want to keep your opponent off balance. You can attack both arms and legs in a number of ways to keep your opponent from bracing himself and executing moves. Make your opponent carry your weight and drive him forward trying to get as much weight forward as you can to break him down. Drive your opponent’s body (i.e. weight) forward. This is key.

Coach Gable prefers a technique he calls “jam and control.” On the whistle, you want to jam your opponent forward while making sure to keep your arms behind your opponent’s arms when performing the jamming action. Repeated hip thrusts may be needed to break your opponent’s position. Riding on your toes can give you more mobility and allow you to apply greater pressure on your opponent. You can execute a spiral ride, chop an arm, grab an ankle, or put in a cross body ride just to name a few options.

Pinning combinations include the half nelson, arm bar, double arm bar, hammerlock, cradles, leg turks, and pins from leg riding (turk, force half, guillotine).

Coach Guy Burdett related a story from his high school days concerning technique. He mentioned that a wrestler who knows more techniques than his opponents has a superior advantage and is likely to win the majority of his matches. He related a story in which he obtained a video one summer that covered the half nelson. Yes, everybody knows how to do a half nelson. It’s one of the first moves a wrestler learns. But, this video taught the young Coach Burdett how to use leverage and angles to apply the half nelson in ways he’d never used before. Evidently, his opponents had never learned about these particular half nelson techniques either because he pinned several of his opponent’s after the season started using something as fundamental as the half nelson. The lesson here is to learn the correct technique for every move and hold and to learn several ways of doing those holds and moves.

Bottom Position

When you’re down in the bottom position your opponent wants very much to break you down, turn you, and pin you. Don’t let that happen. Keep a fairly wide base with arms slightly bent. Keep your weight fairly light on your hands. Explode on the whistle and create space between you and your opponent. Drive your weight back into your opponent and fight for hand control. Hand fighting skills and hand control are essential. Keep your elbows in and make your opponent reach over or around your arms not inside. If he does grab a wrist then peel his hand off. If you get broken down to your stomach and he has a wrist, you may have to “swim” your arm out to get it free. If your opponent grabs an ankle don’t try to move forward. Put weight back on your ankle and peel his hand off. You never want to rest your head on the mat. You’ll get called for stalling. You absolutely need to get back to your base. Your base consists of four props or braces. These supports I refer to are, of course, your two arms and two legs. If you get broken down, you need to get back to your base and get your hips back under you so you have a good center of gravity.

The hip heist is a very important technique to utilize when in the bottom position. The hip heist creates a lot of space. You should practice hip heist drills every practice. The hip heist motion is, of course, commonly seen when a wrestler executes a switch from the bottom. One of my favorite moves in high school was a standing switch. I liked to hit a switch when my opponent tried to bring me back to the mat.

The most common move from the bottom is a simple stand-up. The stand-up is popular because it works. Keep your elbows in as you come up and control his hands. Hip heist while clearing his hands and you’re out of there, scoring a one point escape. The switch and sit out are important to learn as well. If you can perform a granby roll (and you should be able to), you can score points and perhaps even get a pin. But, scoring a one point escape from a stand-up is much more common and usually much safer.

You never want to end up on your back but it happens even to the best of wrestler s occasionally. For this reason, you need to learn to bridge. Effective bridging can be the difference between getting pinned and not getting pinned. Even if you don’t win the match, if you don’t get pinned you can at least save your team some points.

Remember that the bottom position is not simply a defensive position. You need to be thinking in an offensive way. There are ample opportunities for escapes and reversals from the bottom position. Even though all positions require defense at times, you should always be concentrating on being offensive and scoring even in the bottom position.

A wrestler needs to practice and drill frequently every position and several moves to become successful. Therefore, make sure you have a good knowledge base and that you know proper technique.
